Low and slow rustic cooking, hot smoking, cold smoking, braising, Jambalaya, BBQ’ing, grilling, curing, marinating, and the rubbing of meats is NOT a job in its own right. It’s a passion, a passion to bring out the very best of all and any cut of meat, whilst delivering maximum texture and flavour within every morsel, and more importantly, illuminating the taste buds beyond all expectations.
Whether It’s for Meat-eaters or Vegetarians, this is a passion, an obsession, and a lifelong pastime that has sucked me in for the past 45 years.
Our style of food is influenced by many regions. Low and slow-smoked brisket from Texas through to deep south Jambalaya. Cured and smoked sausage influenced by regions such as Poland and Hungary through to smoked Turkey and pulled pork from the States and Mexico.
Visual entertainment in full view whilst we cook. Weddings, events, functions - you name it, we deliver. All budgets can be catered for. So just shout to talk through your requirements and we will work with you to bespoke the perfect menu.
