About Chef Simon Ltd
Chef Simon has his eye on the prize. Simon’s interest in cooking was simmering from an early age. Growing up in Poland, he split his spare time between playing football with his friends and getting his hands dirty by helping his mum in the kitchen. Simon was fascinated with food, the taste and flavours excited him. He was keen to try everything and anything to understand and let his palette marinate.
This passion drove him to the UK and eventually to London working under esteemed Mark Sargeant at the Great Northern Hotel. Mark introduced an impressionable Simon to the world of gourmet food, marrying the freshness and seasoning from homegrown produce from farm to fork. By May of 2016 Simon honed his skills and started at Woughton House Hotel. His move to Milton Keynes inspired his fascination with British produce and how to churn the worldly flavours. He made his mark in bringing to life the character and charm of the hotel with food. Simon graduated from Head Chef of Woughton House Hotel to Executive Head Chef of both this and Mercure Milton Keynes. Simon cooks with the individual in mind.
Returning to the core his mother instilled within him, he starts by understanding his audience before adding his own zest. This young chef is hungry to keep pushing boundaries and sees Milton Keynes’ first Michelin star on his horizon.
