About MudBugs Creole Cuisine

We take inspiration from The Creole Culture of Louisiana to bring you some insanely delicious grub. Straight from “The Big Easy” to your Event.

‘MudBugs’ is Hillbilly slang for Crayfish but to us, it means something more. Our food is made with lots of passion, fresh ingredients, and nothing else. No pre-made, bought-in, or packet nonsense. Cooked old school, with fire and smoke - no microwaves or fancy techniques. We believe food shouldn’t be served in styrofoam or plastic so we prefer compostable kraft disposables and bamboo cutlery. We also use quality suppliers for our stock, using only UK farm-sourced meats and as much veg from UK stock as we can. Quality matters to taste so we don’t cheap out on the everyday stock either. We import San Marzano tomatoes from Italy because they are the best for sauce. We use specialist suppliers for our dried herbs and spices too. Absolutely everything is made by our chefs from scratch from our smoked 'bourbon street' brisket to our Carolina reaper hot sauce.

Creole is a Culture that originated from Acadians – Descendants of the French & Spanish colonials who settled in South Louisiana during the 17th & 18th centuries. What emerged was a culture based on a mix of French, Spanish, West African, and Native American Indians. Think American BBQ mixed with French Saucier techniques, smoked paprika from Spain & chilies from West Africa.

This is a culture of no-holds-barred flavor. We follow this Mantra in the kitchen – highly seasoned, with a focus on eye-popping deliciousness – look elsewhere for healthy eating – This food is about pure joy with no compromise.

Our two-man team of chefs can serve 30 to 150 people easily and potentially more depending on your event requirements. We serve you directly from our trailer kitchen hatch. We can operate anywhere that has space for our trailer which takes up around 12 x 8 feet. We only need access to a single normal UK plug socket and can work from a generator if required.

Typical Clients

We have had several successful trade days serving around 50-80 customers for a client in Manchester. We have also catered for private parties, birthdays, and small festivals. We are on our second year as exclusive catering provider for the North Shropshire Big Weekend and hope to be involved for many years into the future.

We started on markets in Todmorden and have also run a MudBugs takeaway across 2 sites. Our chefs have experience across multiple hotels, restaurants and gastro pubs from all across the UK. MudBugs has become our second job, it's something of a passion project now as we all have other jobs that pay the bills. We take on gigs with the trailer when we can, and we refuse to compromise on quality, serving only food we can really get excited about! Our ethos is we are there to make everyone happy, we don't have strict portion sizes or restrict what anyone can order... if your guests want a bit of everything they'll get it.
