Such an overused phrase – but when food has been a massive part of your life, and has been your job since leaving school, I guess passion for food is where it’s at. I love food, the feel of it, and the smell of it, the textures and colours it gives. To create something wonderful from raw ingredients never ceases to give me a thrill. Vegan chefs are an unusual breed and I am no exception! I love to cook local plant base seasonal, and experiment with food from further afield. I can find respect in a lettuce or a chickpea Salad; it doesn’t always have to be a gourmet plate of food. Some of the best food is amazing because it’s simple and doesn’t need to dress itself up.
